  • Amaranth made up around 80% of the Aztec people's energy consumption, enjoyed for its rich composition of fiber, protein and high levels of magnesium, calcium, manganese, iron and vitamins A and C, Amaranth has also shown cholesterol-lowering properties.

  • Chia followed amaranth closely as the crop treasured most by the Aztecs. This is not surprising, given its bountiful protein content and deep source of vitamins B1 and B3, calcium, iron, magnesium, zinc and omega 3.

  • Pepita Verde (pumpkin seeds) were domesticated about 10,000 years ago. They feature protein and rich levels of potassium, magnesium, phosphorus, linoleic, and oleic acids, and dietary fiber.

  • Cacao was domesticated by the Olmecs of Mexico some 4,000 years ago, as well as enjoyed by Mayans along the Yucatan Peninsula. Theobroma cacao is rich in antioxidants and flavonoids, fiber, protein, zinc, potassium and oleic acid, plus vitamins E, B2, B1, BS, B3 and B9.

  • In ancient Mesoamerica, Amaranth was known as huautli, meaning "the smallest giver of life". Cultivated for 8,000 years, Amaranth was a staple food of the Aztecs, who associated it with longevity. The Aztecs used Amaranth to craft images of their gods during religious celebrations, then shared and ate these statues to "take the god into them".

  • Originally grown and consumed in its native Mexico and Guatemala during pre-Columbian times, Chia has conquered the world thanks to its remarkable nutritional benefits. The Aztecs believed Chia brought them incredible strength and endurance - they valued it so highly that it was offered to the gods during religious ceremonies.

  • Pepita Verde (Pumpkin seed) has long been used in traditional medicine by the indigenous peoples of North America. Pepita Verde is rich in antioxidants, healthy fats and minerals with possible benefits including the boosting of bone health, the immune system and sexual wellbeing.

  • Cacao was also present in many religious rituals. Its genus name, Theobroma translates as "food of the gods" - it was savored daily by the Ninth Emperor of the Aztec Empire, Moctezuma himself.
